Many possibilities.

A. One Rat Pup a week will not be enough food for long, I'd recommend feeding every 5 days while young.
B. Yes, he could still be getting settled in and nervous.
C. Did you wake him up?
D. Is he coming up for a shed (his eyesight will worsen and hence he will be more nervous).

from the sound of it, he's probably going into shed. Sofia's just gone through her 1st one since I've had her & just after her eyes clouded & cleared she hissed at me a few times. It took her about 7 days of being left completely alone apart from changing her water & increasing the humidity & yesterday morning she'd shed, absolutely perfect eye caps and all!!
